What is SUSHI

 

Sushi is a Japanese food consisting of cooked vinegared rice combined with other ingredients, usually raw fish or other seafood. Ingredients and forms of sushi presentation vary widely, but the ingredient which all sushi have in common is vinegared rice. The vinegared rice is also referred to as shari and sumeshi. Raw meat (usually but not necessarily seafood) sliced and served by itself is sashimi. Many non-Japanese use the terms sashimi and sushi interchangeably, but they are not synonymous. Sushi refers to any dish made with vinegared rice. The contemporary version, internationally known as “sushi”, was created by Hanaya Yohei (1799–1858) at the end of the Edo period in Edo. Sushi invented by Hanaya was an early form of fast food that was not fermented (therefore prepared quickly) and could be conveniently eaten with one’s hands. Originally, this sushi was known as Edomae zushi because it used freshly caught fish in the Edo-mae (Edo Bay or Tokyo Bay). What is IZAKAYA

 

Izakaya is a type of Japanese drinking establishment which also serves food to accompany the drinks. They are casual places for after-work drinking. Food and drink are ordered throughout the course of the session as desired. They are brought to the table. For a set price per person, customers can continue ordering as much food and/or drink as they wish, with a usual time limit of two or three hours. Izakaya dining can be intimidating to non-Japanese with the wide variety of menu items and the slow pace of the meal. Food is normally ordered slowly over several courses rather than all at once. The kitchen will serve the food when it’s ready rather than in formal courses like Western restaurants. Typically a beer is ordered when sitting down before perusing the menu.
